Ingredients:
1 cup (2 sticks) butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1 (14-ounce) package sweetened flaked coconut
6 ounces chopped macadamia nuts
1 (8-ounce) bag toffee chips
Directions:
Preheat the oven to 375 degrees. Beat the butter, brown sugar, granulated sugar and egg in a bowl until well blended. Add the flour and baking soda and beat at a low-speed. Add the coconut, macadamia nuts and toffee chips and beat at a high-speed until well blended. The dough will be very stiff.
Roll heaping teaspoonfuls of the dough into balls. Flatten slightly between your palms. They should be around 2 1/2 inches across. Arrange on a cookie sheet. Bake for 10-12 minutes or until light brown. Cool for 2-3 minutes on the baking sheet, then remove promptly. Waiting longer may result in sticking. Cool completely and enjoy!
