Guava cheesecake is done.. Flan almost burn it, but done… Looks fine… I just hope it taste as good as it looks… Fruit cookies will have to wait until Saturday… No energy left…
First time I do a small intimate Halloween Party at home and I’m so excited… I love Halloween… It’s my favorite holiday… For me, it signifies the beginning of autumn… All those wonderful looking colors when you go outside… The weather is just right… Not too hot and not too cold… It’s the first time right after summer I begin to contemplate Thanksgiving and Christmas… Family fun and get together’s… Simply love it…
Here are two of my favorite recipes: Both are very simple to make…
- Guava Cheesecake
(2) 8oz pkg of cream cheese softened
(1) Cup guava paste cut into chunks
(3/4) Cups of sugar
(1) tsp of almond or vanilla extract
(3) whole eggs
(1/2) Cup of sour cream
(1/2) Lime – Squeezed
(1) Honey Graham Pie Crust 9oz or you can make your own (have to google recipe)
Preheat oven at 350. Beat all ingredients. Once it is smooth – Pour in the pan and bake for about an hour until golden brown. Stick toothpick in middle and make sure it comes out clean. Once you turn oven off, leave in oven for another 30 minutes. Cool and refrigerate. Can top it with guava marmalade or whip cream. I also used gummy worms to decorate it..
- Flan
(1) 14oz can condensed milk
(1) 12oz can evaporated milk
(1) tsp of vanilla
(5) Eggs
1/2 cup of sugar
(1) Container with lid that seals. Can use an 8 in.
Preheat oven at 400. In a small heavy saucepan cook sugar over medium-low heat stirring occasionally until sugar is completely melted. Pour in a 9 inch baking dish/pan with lid and set aside. Mix the rest of the ingredients well. Pour into sugar mixture. Make sure lid is sealed tightly. Place dish inside a roasting pan filled halfway with water and put in oven. Bake for 50-60 minutes until center is set. Take out and test with pick. If pick comes out dry then it is done. Let cool and refrigerate. Before serving, transfer to a large deep dish. Simply put plate over pan/dish and turn over. Make sure to use a bigger plate and not flat due to the sugar melting.
